Ingredients
- 420g can beetroot, drained and chopped
- 1 cup walnuts, finely chopped
- ½ cup low fat feta cheese, crumbled
- 2 good handfuls of baby spinach, stalks removed
- 1½ cups unsweetened apple juice
- 1 cup low fat natural yoghurt
Instructions
Place all ingredients in a blender or food processor and puree until thin enough to drink through a thick straw.
